Dr. Elin Östman is an expert on the preventive potential of food in relation to metabolic syndrome, with special emphasis on blood glucose and appetite regulation. Dr. Elin is the Chief Scientist of GOOD IDEA, Inc.

Before GOOD IDEA, Dr. Elin was an associate professor and senior lecturer in Applied Nutrition at the Food for Health Science Centre of Lund University in southern Sweden. Her 20-year career in academia comprises groundbreaking research on preventive food concepts and healthy diets to reduce lifestyle and diet-related conditions such as obesity, type 2 diabetes, and cardiovascular disease.

To date, Dr. Elin has been a co-author of 49 peer-reviewed original articles and 3 reviews. She is a frequent speaker at international conferences and events in the field of nutrition and food science, and the co-founder of four food innovation-related start-up companies.

In 2001, Dr. Elin published a paper establishing the connection between the intake of various milk products and surprisingly high insulin responses. Later on, her research group found that intake of whey before and with a meal rich in fast carbohydrates could substantially lower the blood sugar spike following a meal, similar to the “milk mechanism”. The presence of five specific essential amino acids appeared to be significant. An idea of effective blood glucose regulating food products was born, and a joint product development project was initiated with Food & Biotech company Aventure AB.

When Dr. Elin and her colleagues at the Anti-diabetic Food Center isolated the five amino acids and added a small proportion of chromium, well known for its role in blood sugar regulation, the results were significant. 

“Our first clinical study showed that the blend dissolved in water, taken before and with a carb-rich meal could reduce the post-meal blood sugar spike by 20-30%”, says Dr. Elin. “Repeated clinical studies confirmed the results, and we started working on a product that could help the body handle blood sugar spikes in a more efficient way.”
