InnerFight podcast #109 Baked Salmon

Packed full of Omega-3s, vitamin D and being good for your joints (due to the calcitonin), salmon is a fantastic choice for your meal. I know, I know, I hear you, fish can get awfully boring too. So it's HP to the rescue, saving you from another bland fish dinner. Pesto is super easy to make, and I have several pesto combinations in my repertoire that I will share with you guys in future posts. In this recipe I used dry sun-dried tomatoes which I soaked in water for 30 minutes, but I'm sure the jarred ones will work perfectly fine, just drain them off first.
